| Zucchini Pineapple Loaf |
Ingredients
2 Egg whites
1/2 cup olive oil
1.5 cup sugar
1 zucchini - grated
1 teaspoon vanilla
1/2 can (4oz) crushed pineapple (drained)
1.5 cups all purpose flour
1 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
Chopped walnuts, raisins or dried cranberries
Method
1. Preheat oven to 350°F
2. Beat egg whites until they become fluffy
3. Add oil, sugar and vanilla; continue beating mixture
4. Stir in the zucchini and pineapple
5. In a separate bowl mix flour, baking soda, salt, baking powder, cinnamon, and nutmeg.
6. Add dry ingredients into wet little by little and gently stir (by hand) after each addition.
7. Add the walnuts, cranberries and raisins
8. Flour-dust 5 X 9 inch loaf pan.
9. Pour the batter and bake for 1 hour or until a tooth pick comes out clean.
10. Cool in a rack
